Ingredients

200 g Rice noodles, cover with water and soak for two hours

100 g Bean sprouts, 1 handful per person

½ Tofu, extra firm, cut lengthwise into 3” strips and cut into 1 ¼ “cubes

Chicken, uncooked and cubed

50 g Cabbage, ¾ cup sliced thin

2 Spring onions, Green onion cut into 1’ slices

2 Garlic cloves, peel, slice into thin slices

1 Egg

2 TBS Oil

2 TBS Fish sauce

2 TBS sweet or spicy sauce

2 drops Black soy sauce

2 tsp Sugar

Serve with cucumber slices, lime wedges, crushed peanuts

Preparation:

In hot peanut oil add tofu and brown. Add garlic slices. Crack an egg, stir in quickly add soaked rice noodles. Add 1 TBS fish sauce (1 TBS per person) Add sweet or spicy sauce and sugar. Keep stirring while adding soy sauce. Use a back and forth motion to separate noodles. Add cabbage, bean sprouts and onion. Place on a plate. Sprinkle with crushed peanuts. Served with cucumber slices and lime wedges.
