Fruit in SE Asia was heavenly. There is such a plethora of fruit; pineapple, watermelon, mangoes, mangosteens, rambutans, dragon fruit, longans, stinky durian, and others I didn’t get the chance to try. All delicious, all served in the markets, on the streets or restaurants.
They would take a fresh mango, slice off both cheeks of the mango, and dice it. The diced mango would be served on top of a mound of shaved ice with a peach simple syrup poured on top of the mango and ice mound. Delightful!
Another favorite of mine was mango with sticky rice. The sticky rice was sometimes molded in a bowl shape or a heart shape from a cookie cutter topped with fresh, diced mango, and a peach syrup.

Pineapple is another all-time favorite. I was served pineapple in Thailand on a kayaking trip in Ao Hang and a whitewater adventure in Phuket. Sweet, delicious and so, so refreshing.
The video below by Morgane from Laos is worth the time as she shows you step by step, just how I saw it being cut. However, the guides in Thailand made cutting whole pineapples look so easy and cut them so fast.
Originally, I was going to write the directions on what I watched our guides do but as I was following my notes I knew it would be complicated to write. That’s when I decided to search for a video to show you. It’s a great way to serve pineapple. I’m getting better but my speed is not there yet. I hope you try it yourself.
